This dip makes a tasty addition to any Mexican or Southwest-themed meal, and is quite delicious on it’s own as a snack. Or, if you’re feeling froggy, you can convert this to a Skillet Queso Chicken Dinner!
Ingredients
- 1 pound ground beef
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic salt
- 1 tsp paprika
- 1/2 cup beef broth
- 1 cup heavy cream
- 1 cup Mexican-blend cheese (You can use pepper jack, colby jack, cheddar, or whatever other cheese you prefer).
- Juice of 1 lime
Process
- Preheat a cast-iron skillet over medium heat.
- Season the ground beef with the spices.
- Place the ground beef in the skillet and cook until browned. Remove from the skillet and set aside.
- Return the skillet to the heat. Add the beef broth and whisk well, absorbing the pan drippings and such. Turn the heat to low.
- Add the heavy cream and continue whisking. The sauce should be bubbling and thickening.
- Add the cheese and continue whisking. The sauce should be smooth and creamy and on the thicker side.
- Add the ground beef back to the sauce and mix well.
- Add the lime juice.
- Remove from the heat and serve! This sauce is great for tortilla chips.
