Skillet Queso Chicken Dinner


This dish is based on our Skillet Queso Dip. It’s a cheesy chicken-thigh mix that goes great with potatoes or rice. Yum!

Ingredients

  • 6-8 chicken thighs
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic salt
  • 1 tsp paprika
  • 1/2 cup chicken broth
  • 1 cup heavy cream
  • 1 cup Mexican-blend cheese (You can use pepper jack, colby jack, cheddar, or whatever other cheese you prefer).
  • Juice of 1 lime

Process

  1. Preheat a cast-iron skillet over medium heat.
  2. Season the chicken thighs with the spices.
  3. Pour a tablespoon or so of olive oil in the skillet.
  4. Place the thighs in the skillet and cook until browned. Remove from the skillet and set aside.
  5. Return the skillet to the heat. Add the chicken broth and whisk well, absorbing the pan drippings and such. Turn the heat to low.
  6. Add the heavy cream and continue whisking. The sauce should be bubbling and thickening.
  7. Add the cheese and continue whisking. The sauce should be smooth and creamy and on the thicker side.
  8. Add the chicken thighs back to the sauce and mix well.
  9. Add the lime juice.
  10. Remove from the heat and serve!
