This dish is based on our Skillet Queso Dip. It’s a cheesy chicken-thigh mix that goes great with potatoes or rice. Yum!
Ingredients
- 6-8 chicken thighs
- 2 tsp chili powder
- 1 tsp cumin
- 1 tsp garlic salt
- 1 tsp paprika
- 1/2 cup chicken broth
- 1 cup heavy cream
- 1 cup Mexican-blend cheese (You can use pepper jack, colby jack, cheddar, or whatever other cheese you prefer).
- Juice of 1 lime
Process
- Preheat a cast-iron skillet over medium heat.
- Season the chicken thighs with the spices.
- Pour a tablespoon or so of olive oil in the skillet.
- Place the thighs in the skillet and cook until browned. Remove from the skillet and set aside.
- Return the skillet to the heat. Add the chicken broth and whisk well, absorbing the pan drippings and such. Turn the heat to low.
- Add the heavy cream and continue whisking. The sauce should be bubbling and thickening.
- Add the cheese and continue whisking. The sauce should be smooth and creamy and on the thicker side.
- Add the chicken thighs back to the sauce and mix well.
- Add the lime juice.
- Remove from the heat and serve!
