This raspberry sauce is good on desserts like ice cream or cheesecake. It’s also delicious when mixed with yogurt or drizzled on pancakes or waffles!
Ingredients
- 2/3 cup sugar
- 4 tsp. corn starch
- 1/4 cup water
- 2 1/2 cups raspberries
- 2 teaspoons lemon juice
Process
- Mix the sugar and cornstarch with a whisk. Pour into a small saucepan.
- Stir in the water and mix until smooth.
- Turn the heat to medium-high and add the raspberries.
- Bring the mixture to a boil, stirring occasionally and smashing the raspberries with a whisk as you go.
- Stir in the lemon juice.
- Optional: if you don’t like raspberry pips, you can strain the mix through a sieve. If you don’t mind the texture of the pips, leave them in.
- Transfer to a small bowl and cool, and then place into the refrigerator.
