Raspberry Sauce

This raspberry sauce is good on desserts like ice cream or cheesecake. It’s also delicious when mixed with yogurt or drizzled on pancakes or waffles!

Ingredients

  • 2/3 cup sugar
  • 4 tsp. corn starch
  • 1/4 cup water
  • 2 1/2 cups raspberries
  • 2 teaspoons lemon juice

Process

  1. Mix the sugar and cornstarch with a whisk. Pour into a small saucepan.
  2. Stir in the water and mix until smooth.
  3. Turn the heat to medium-high and add the raspberries.
  4. Bring the mixture to a boil, stirring occasionally and smashing the raspberries with a whisk as you go.
  5. Stir in the lemon juice.
  6. Optional: if you don’t like raspberry pips, you can strain the mix through a sieve. If you don’t mind the texture of the pips, leave them in.
  7. Transfer to a small bowl and cool, and then place into the refrigerator.
