Flavorful Mexican chorizo – available at most supermarkets, but you could also try your local Latin supermarket – adds a fabulous layer of flavor to this dish.
Ingredients
- 2 tbsp. butter
- 1 pound Mexican chorizo (casing removed)
- 1 cup chopped onion
- 1/2 teaspoon table salt
- 1/2 teaspoon pepper
- 2 cloves minced garlic
- 4 cups chicken. broth
- 1 cups water
- 12 ounces spaghetti
- Chopped scallions, as garnish
Process
- Melt the butter in a Dutch oven over medium heat.
- Add the chorizo and cook until browned.
- Add the onion, salt, and pepper, and cook until the onions are soft, 2-3 minutes.
- Add the garlic cloves and cook until the smell blossoms, probably 30 seconds to 1 minute.
- Add the broth and water and turn the heat to high.
- Once boiling, add the pasta and cook until the liquid has boiled off and the pasta is in a thickened sauce, 12-14 minutes.
- Remove from the heat.
- Add the scallions as garnish, and serve!
