One-Pot Chorizo Noodles


Flavorful Mexican chorizo – available at most supermarkets, but you could also try your local Latin supermarket – adds a fabulous layer of flavor to this dish.

Ingredients

  • 2 tbsp. butter
  • 1 pound Mexican chorizo (casing removed)
  • 1 cup chopped onion
  • 1/2 teaspoon table salt
  • 1/2 teaspoon pepper
  • 2 cloves minced garlic
  • 4 cups chicken. broth
  • 1 cups water
  • 12 ounces spaghetti
  • Chopped scallions, as garnish

Process

  1. Melt the butter in a Dutch oven over medium heat.
  2. Add the chorizo and cook until browned.
  3. Add the onion, salt, and pepper, and cook until the onions are soft, 2-3 minutes.
  4. Add the garlic cloves and cook until the smell blossoms, probably 30 seconds to 1 minute.
  5. Add the broth and water and turn the heat to high.
  6. Once boiling, add the pasta and cook until the liquid has boiled off and the pasta is in a thickened sauce, 12-14 minutes.
  7. Remove from the heat.
  8. Add the scallions as garnish, and serve!
