Brookie Cake


Several years ago we took a trip to New York. My daughter found an enormous, brick-sized cookie/brownie thing at this little tea shop. We’ve been chasing that Brookie ever since. This recipe makes a delicious, well-balanced, flavorful brownie-cookie that the whole family will enjoy.

Ingredients

cookie
  • 1/2 cup (113 grams) unsalted butter, melted
  • 1/2 cup (100 grams) brown sugar
  • 1/3 cup (67 grams) granulated sugar
  • 1 large egg, room temp
  • 1 tbsp. vanilla extract
  • 1 1/4 cups (158 grams) flour
  • 1/2 tsp. baking soda
  • 1 cup semi-sweet chocolate chips
Brownie
  • 1 cup unsalted butter (227 grams)
  • 1 cup (6 oz) semi-sweet chocolate chips
  • 1 cup (200 grams) granulated sugar
  • 1/2 cup (100 grams) brown sugar
  • 3/4 cup (60 grams) Dutch-process cocoa powder*
  • 3 eggs, room temp
  • 2 tsp vanilla extract
  • 1/2 cup + 2 tablespoons flour (75 grams)
  • 1 tsp kosher salt

* Dutch-process cocoa powder is made differently from regular cocoa powder. It will usually say Dutch-process or European-process on the container. I used Ghirardelli brand for these brookies (not sponsored).

Process

  1. Preheat oven to 350.
  2. Line the bottom of a 10-inch springform pan with parchment paper. Grease the sides.
make Cookie Dough
  1. Combine the dry ingredients in a bowl and set aside.
  2. In a separate, medium-sized bowl, whisk together the melted butter, white and brown sugar, egg, and vanilla until well-mixed.
  3. Add the dry ingredients. Switch to a wooden spoon and mix until combined.
  4. Add the chocolate chips and mix until incorporated, then set aside.
Brownie Batter
  1. Place the chocolate chips in a non-plastic bowl and set aside.
  2. Brown the butter: place the butter into a saucepan over medium-low heat. Stir frequently. The butter will begin to pop and sizzle and emit a nutty smell and a golden-brown color. Once the butter stops popping and sizzling, remove it from the heat, and pour it over the chocolate chips. Wait a few minutes for the heat to melt the chocolate chips, then mix well. It should make a thin brown chocolatey batter.
  3. In a separate bowl, whisk together the granulated sugar, brown sugar, cocoa powder, and salt.
  4. Pour the chocolate-chip mix into the dry ingredients and mix well.
  5. Add the eggs, one at a time, whisking until incorporated.
  6. Add the vanilla extract and flour and fold the batter together.
Assemble
  1. Pour the brownie batter into the springform pan.
  2. Use your hands to sprinkle chunks of the cookie dough onto the brownie batter.
  3. Bake for 35-45 minutes.
  4. Cool completely before slicing.
  5. Enjoy!
