This chef salad is something we throw together from time to time when we want a heart dinner that we can pretend is healthy. Actually, despite the presence of some processed meats, this is a fairly healthful meal with plenty of vegetables and greens. Serve it with Homemade Dill Dressing to add some brightness and flavor to the meal!

Ingredients
- 2 heads Romaine lettuce, washed and chopped
- 3 medium-size cucumbers, sliced (lots of women prefer a medium-size cucumber, I’m told)
- 10 ounces cherry tomatoes
- 2 carrots, diced
- 1 red bell pepper, diced (you can use different colors if you want, or try adding some jalapeño for a little heat)
- 6 slices bacon
- 3 ounces thick-cut deli ham
- 3 ounces thick-cut deli turkey
- 3 ounces cheddar cheese, cut into small cubes
- 1/2 cup black olives, sliced
- Homemade Dill Dressing (you can use a different dressing if you prefer)
Process
- Combine all the ingredients in a large bowl.
- Toss with the dill dressing; or, serve with the dressing on the side.
