Chewy Lemon Cookies


These lemon cookies have a chewy texture and a soft lemon flavor. If you want a more intense lemon cookie, check out our Lemon Drop Cookies recipe.

Ingredients

  • 1 cup (2 sticks) unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 3 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 large egg
  • 3 cups flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Instructions

  1. In an electric mixer with the whisk attachment, or using a manual whisk, cream the butter, sugar, and lemon zest.
  2. Add the lemon juice and egg, and beat to combine.
  3. Switch to the paddle attachment (or a wooden spoon) and add in the flour, baking soda, and salt. Mix just until combined.
  4. Cover the dough with foil or plastic wrap and refrigerate for 1 hour.
  5. Preheat the oven to 350 degrees and line a cookie sheet with a silicone baking sheet.
  6. Scoop the dough out into even-sized balls.
  7. Bake for 10-12 minutes. Remove from oven and cool for 10 minutes, then transfer to a cooling rack.
  8. Enjoy!
