Ingredients
- 1 cup (2 sticks) unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 tbsp lemon zest
- 2 tbsp lemon juice
- 1 large egg
- 3 cups flour
- 1 teaspoon baking soda
- 1/4 teaspoon salt
Instructions
- In an electric mixer with the whisk attachment, or using a manual whisk, cream the butter, sugar, and lemon zest.
- Add the lemon juice and egg, and beat to combine.
- Switch to the paddle attachment (or a wooden spoon) and add in the flour, baking soda, and salt. Mix just until combined.
- Cover the dough with foil or plastic wrap and refrigerate for 1 hour.
- Preheat the oven to 350 degrees and line a cookie sheet with a silicone baking sheet.
- Scoop the dough out into even-sized balls.
- Bake for 10-12 minutes. Remove from oven and cool for 10 minutes, then transfer to a cooling rack.
