Lemon Drop Cookies


These cookies have a bright, lemony flavor and a lovely soft texture, which makes them short-lived in the cookie jar. You might consider making a double-batch and freezing half the dough for later — these cookies have proven to be tremendously popular in our house!

Ingredients

  • 1 stick (1/2 cup) unsalted butter, room temperature or softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tsp. vanilla extract
  • 1 tsp. lemon juice
  • 1 tsp. lemon zest
  • 1 1/2 cups flour
  • 1/2 tsp. baking powder
  • 1/4 tsp. salt
  • 1/4 tsp. baking soda

For the glaze:

  • 1 cup powdered sugar
  • 5 tsp. lemon juice

Process

  1. Heat the oven to 350 degrees. Get out a baking sheet and line with a silicone baking pad or some parchment paper.
  2. Using a mixer, cream the sugar and butter together.
  3. Add the egg, vanilla, lemon juice, and lemon zest. Mix together until incorporated.
  4. Stir in the flour, baking powder, salt, and baking soda.
  5. Scoop the cookies onto the tray, using a 1-tbsp. spoon or scoop.
  6. Bake for 7 minutes, then remove from the oven and let cool on the baking sheet for 10 minutes. Transfer to a cooling rack.
  7. Make the glaze: mix the powdered sugar and lemon juice together until the mix becomes a thick, pasty glaze.
  8. Once the cookies are cool: drizzle the glaze over the cookies.
  9. Eat and enjoy! These brightly flavored little cookies will not last long, so get them while the getting is good.
