These cookies have a bright, lemony flavor and a lovely soft texture, which makes them short-lived in the cookie jar. You might consider making a double-batch and freezing half the dough for later — these cookies have proven to be tremendously popular in our house!
Ingredients
- 1 stick (1/2 cup) unsalted butter, room temperature or softened
- 1 cup granulated sugar
- 1 large egg
- 1 tsp. vanilla extract
- 1 tsp. lemon juice
- 1 tsp. lemon zest
- 1 1/2 cups flour
- 1/2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 tsp. baking soda
For the glaze:
- 1 cup powdered sugar
- 5 tsp. lemon juice
Process
- Heat the oven to 350 degrees. Get out a baking sheet and line with a silicone baking pad or some parchment paper.
- Using a mixer, cream the sugar and butter together.
- Add the egg, vanilla, lemon juice, and lemon zest. Mix together until incorporated.
- Stir in the flour, baking powder, salt, and baking soda.
- Scoop the cookies onto the tray, using a 1-tbsp. spoon or scoop.
- Bake for 7 minutes, then remove from the oven and let cool on the baking sheet for 10 minutes. Transfer to a cooling rack.
- Make the glaze: mix the powdered sugar and lemon juice together until the mix becomes a thick, pasty glaze.
- Once the cookies are cool: drizzle the glaze over the cookies.
- Eat and enjoy! These brightly flavored little cookies will not last long, so get them while the getting is good.
