Spaghetti is a simple meal that lends itself well to elevation. This fancy spaghetti sauce uses a variety of savory vegetables and spicy sausage to make a delicious sauce that’s a perfect way to juice up spaghetti night.
Ingredients
- 1 teaspoon minced garlic (use as much as you want, sometimes we just dump a bunch in there)
- 1/2 white or yellow onion, diced
- 1 bell pepper, any colour you like, diced
- 1 cup of diced baby bella mushrooms
- 1 carrot, diced
- 2 tablespoons olive oil
- 1 pound of spicy Italian sausage (you can use sweet sausage or ground beef if you like)
- 28 ounces crushed tomatoes
- Fresh basil to taste
- Salt
- Red pepper flakes
Process
- In a large saucepan, cook the sausage until lightly browned. Drain, and set aside.
- Add the olive oil to the pan and cook over medium heat until it is shimmery.
- Add the garlic and onions and let them cook, stirring occasionally, for about three minutes.
- Add the bell peppers, mushrooms, and carrots. Cook for a further 3 minutes or so.
- Add the cooked sausage to the mix.
- Add the 28-ounce can of tomatoes to the saucepan, then stir.
- Season to taste with salt, red pepper flakes, and fresh basil. Let the mix sit over low heat and simmer for a while to really blend the flavors together.
- Serve over spaghetti noodles and enjoy!
