Grilled Beef Skewers and Spicy Garlic Sauce

The experience of eating a skewered piece of meat is very human and primal. Meat! On a stick! This meat-on-a-stick recipe features beef marinated in garlic, ginger, soy sauce, sriracha, and honey. Enjoy!

Note: this recipe requires a marinating time of at least 30 minutes, and if you are using wooden skewers, at least 30 minutes to soak the skewers in water.

Ingredients

  • 1 pound beef sirloin, cut into 1-inch cubes
  • 1 red bell pepper, cut into 1-inch chunks
  • 1 red onion, cut into 1-inch pieces
  • 4 tablespoons olive oil
  • 8 cloves minced garlic
  • 2 tablespoons fresh-grated ginger
  • 1/2 cup soy sauce
  • 4 tablespoons honey
  • 2 tablespoons sriracha
  • 2 tablespoons sesame oil
  • Fresh-cracked black pepper
  • 1 teaspoon salt

Process

  1. In a large mixing bowl, combine the olive oil, garlic, ginger, soy sauce, honey, sriracha, sesame oil, salt, and pepper.
  2. Place the cubed beef into a zip-top plastic bag or a container and pour half of the marinade from step 1 over the beef. Reserve the remaining marinade to use as a sauce later. Do not use marinade that has had raw meat in it as a sauce.

Let the beef marinate for at least 30 minutes, but the flavor will be better the longer it sits, up to about 24 hours.

    Once the beef is marinated…
  3. Preheat your grill to medium-high. Let it get nice and hot, at least 500 degrees on the surface.
  4. Thread the beef, pepper, and onions onto metal or wooden skewers in a nice pattern while the grill gets hot.
  5. Place the skewers on the grill and let them sizzle. It will likely take 10-12 minutes to cook the skewers. The internal temperature of the beef should be 135 degrees or so.
  6. Remove the skewers from the heat and let them rest for about 5 minutes.
  7. Serve and enjoy! A nice fresh salad, some rice, or vegetables would be a delightful accompaniment to this meal.
