This salad is loosely based on a salad served at one of our favorite local cafes. We learned how to make it ourselves so we could have it whenever we want! The street corn salsa and creamy chili-lime dressing add a nice punch to this fresh, healthy, and flavorful salad. Enjoy!

Ingredients
Creamy Chili lime dressing
- 1/4 cup sour cream
- 1/4 cup mayonnaise
- Juice of 1/2 lime (1.5 tablespoons)
- 1 teaspoon chili powder
- 1/2 teaspoon salt
- Fresh cracked black pepper
- 1/4 teaspoon cayenne pepper
Street corn salsa
- 1 1/2 cups corn (note: if using frozen corn, heat it ahead of time and set it aside to cool)
- 1 jalapeno pepper, de-veined and diced
- 1/2 teaspoon chili powder
- Juice of 1/2 lime (1.5 tablespoons)
- 2 tablespoons freshly chopped cilantro
- 1/4 cup Cotija cheese
The Salad
- 4 cups fresh Romaine, chopped
- 1/2 cup pickled red onion
- 6 ounces cherry or grape tomatoes
- 1/2 cup feta cheese
- 1 avocado, diced
- 1 cup grilled chicken (optional)
fresh tortilla chips (optional)
- 2 10-inch flour tortillas, sliced into 4 pieces each
- Kosher salt
Process
- Prepare the chili lime dressing: mix all the ingredients together aggressively with a whisk. Set aside to chill.
- Prepare the corn salsa: mix all ingredients together and set aside to chill.
- Prepare the salad: mix the romaine, tomatoes, onions, feta, and grilled chicken in a large bowl.
- Prepare the tortilla chips, if using: fry the sliced tortillas in a pan in olive oil, or in a deep fryer if you have one. Sprinkle a dash of kosher salt over the chips once fried. (If this sounds like too much work you can use commercial tortilla chips)
- Assemble: place a bed of the salad in a large bowl. Scoop some of the corn salsa on top, then drizzle with the chili-lime dressing. Neatly slide the fresh tortilla chips into the bowl to make a fun little arrangement.
- Serve! This salad makes for an exceptional, fresh, and healthy lunch, or a pleasantly light dinner. It’s full of healthful ingredients but also quite delicious!
