Featuring classically prepared chicken, a bright avocado salad, spicy sweet potatoes, and a fresh avocado crema, this recipe is designed to deliver healthy and nutritious food in an envelope of delicious flavor. Ingredients
Chicken
- 2 chicken breasts, sliced into strips
- 1 tbsp. olive oil
- Kosher salt and fresh-cracked black pepper
Spicy Sweet Potatoes
- 2 sweet potatoes, cut into wedges
- 1 tbsp. olive oil
- 1 tsp. salt
- 1 tbsp. chipotle chili powder
- 1/2 tsp. cayenne pepper
- 1 tsp. Sriracha
Avocado Salsa
- 1 fresh avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, diced finely
- 1/4 cup chopped fresh cilantro
- Juice of 1 fresh lime
- 1 tsp. rice wine vinegar
Avocado Crema
- 1 cup sour cream
- 1 avocado
- 1 clove garlic
- Zest and juice of 1 lime
- Kosher salt
Process
- Preheat the oven to 400 degrees.
- While the oven preheats, season the chicken strips liberally with salt and fresh-cracked black pepper. Set aside while you work on the next steps.
- Toss the sweet potato wedges, salt, chipotle chili powder, cayenne pepper, sriracha, and olive oil in a large metal bowl. Arrange the sweet potato wedges on a baking sheet and bake at 400 degrees for 25-30 minutes while you work on the salsa and crema.
- Make the avocado salsa: mix the avocado, tomatoes, chopped onions, cilantro, lime juice, and rice wine vinegar. Set aside.
- Make the avocado crema: blend the sour cream, avocado, garlic, lime zest and juice, and salt in a food processor or blender until smooth and creamy.
- Cook the chicken: preheat a skillet over medium heat. Add the seasoned chicken to the skillet and cook until golden brown.
- Prepare the bowls: arrange the chicken strips, salsa, sweet potato wedges, and crema artfully in a bowl. Serve immediately with extra crema on the side. Season as desired with hot sauce, etc.
