This healthy and delicious meal is sure to satisfy your palate and your body. Chicken is a nice lean protein; we recommend organic, antibiotic-free chicken, or chicken from a local farmer’s market if you can get it. Sweet potatoes are full of vitamins and fiber, and they’re delicious. And finally, avocados are a source of many healthy fats and nutrients that your body needs to thrive.

Ingredients
For the chicken:
- 1 pound of chicken breasts, butterflied or sliced into individual cutlets
- 2 sweet potatoes, cut into wedges
- 1 tbsp. olive oil
- 1 tsp. paprika
- Garlic salt & pepper
For the Avocado salsa:
- 1 avocado, diced
- 1/2 cup cherry tomatoes, halved
- 1/4 red onion, chopped fine
- Chopped fresh cilantro
- 2 tbsp. lime juice
For the avocado crema:
- 1 ripe avocado
- 2 tbsp. plain Greek yogurt or sour cream
- 1 garlic clove, minced
- 1 tbsp. lime juice
- Salt & pepper
Process
- Preheat your oven to 400 degrees.
- Season the chicken breasts: apply a liberal amount of garlic salt, freshly-ground black pepper, and paprika to the chicken breasts. Set them aside.
- Toss the sweet potato wedges with olive oil, salt, and paprika, then place them on a baking sheet and roast them at 400 degrees for 25-30 minutes.
- Make the avocado salsa: mix the diced avocado, cherry tomatoes, red onions, lime juice, and cilantro together in a bowl. Set it aside.
- Make the avocado crema: blend all the ingredients together in a food processor or blender until the sauce is nice and creamy.
- Get out a cast-iron skillet or a deep-sided pan. Preheat over medium heat, then drizzle a little olive oil in the pan and grill or pan-sear the chicken until it is cooked through.
- Place a cooling rack inside a sheet pan. Take the cooked chicken breasts out of the pan and let them rest on the rack for 5 minutes, then slice into strips.
- Assemble the bowls: place the sweet potatoes, grilled chicken, salsa, and crema into a bowl in an aesthetically pleasing way (or a chaotic way if you prefer, I’m not your mom). Garnish as you see fit and serve!
