Creamy Tuscan Chicken


Delicious chicken breasts are cooked with a thick, garlicky cream sauce to make this beloved classic dinner. Enjoy!

Ingredients

  • 1 1/2 pounds of thinly sliced boneless chicken breasts
  • 2 tbsp. olive oil
  • 1 cup heavy cream
  • 1/2 cup chicken broth
  • 1 tbsp. minced garlic
  • 2 tsp. italian seasoning, divided into 1 tsp. portions
  • 1 tsp. garlic salt
  • 1/2 cup parmesan cheese
  • 1 cup chopped spinach
  • 1/2 cup sun dried tomatoes

Process

  1. Season the sliced chicken with 1 tsp. of the Italian seasoning and 1 tsp. of garlic salt. Cover with plastic wrap or put into a container and store in the refrigerator. Let sit for 30 minutes.
  2. Put the olive oil into a heavy skillet and heat over medium heat. Once the oil is hot, cook the chicken. It should be brown on both sides with an internal temperature of 165 degrees. Remove the chicken and set aside.
  3. In the same skillet: add the chicken broth, heavy cream, garlic, Italian seasoning, and parmesan to the skillet. Whisk over medium-high heat until it begins thickening.
  4. Add the spinach and sundried tomatoes. Let the mix simmer until the spinach wilts.
  5. Add the chicken back to the pan, cook for about a minute, and serve! This recipe goes great with a nice Caesar salad or some garlic bread.
