Pizza Quesadillas


Feeling lazy? Don’t want to cook some elaborate meal? Pizza quesadillas are a great way to cook something for your family without needing to do anything complicated or elaborate. Quick, simple, and tasty, this has become a staple dish during busy seasons in our household.

Ingredients

  • Four 10” flour tortillas
  • 1 bag of shredded mozzarella cheese
  • Pizza sauce (We prefer Mid’s Pizza Sauce — this is not a paid promotion, we actually like the sauce)
  • Pizza toppings: pepperoni and sliced mushrooms are easy and inexpensive
  • Garlic salt, red pepper flakes, and oregano to taste
  • Butter

Process

  1. Take a tortilla. Spread mozzarella cheese on one half of the tortilla. Sprinkle garlic salt, red pepper flakes, and oregano on the cheese, if desired.
  2. Add your selection of toppings on top of the cheese and fold the tortilla over to cover the cheese and toppings.
  3. Heat a griddle or skillet on medium heat. When the surface is hot, melt a small pat of butter on the surface, and place the quesadilla on the griddle/skillet.
  4. Toast each side of the quesadilla for 3-4 minutes.
  5. While the quesadilla is cooking: pour some pizza sauce into a little ramekin or a dipping bowl. You may heat the sauce in the microwave if you like, but we usually just serve it cold.
  6. Remove the quesadillas from the heat and let cool for about a minute. Cut into slices with a pizza cutter.
  7. Serve! You can dip the slices in the pizza sauce as you eat.
