Soup: delicious, hot, relatively easy to cook. Can’t go wrong with a good soup! This soup has toothsome potatoes, flavorful spice, and savory sausage. It makes for a great main or side dish!
Ingredients
- 1 tbsp. olive oil
- 1 pound spicy Italian sausage
- 1 tbsp. minced garlic
- 1 onion, diced
- 1/2 tsp. oregano
- 1/2 tsp. basil
- 1/2 tsp. crushed red pepper flakes
- 5 cups chicken broth
- 1 bay leaf
- 1 pound red potatoes
- 2 cups spinach
- 1/4 cup heavy cream
Process
- In a large stockpot, heat 1 tbsp. olive oil. Once the oil is hot, add the Italian sausage and cook until brown.
- Once the sausage is brown, add the onions, garlic, oregano, basil, and red pepper flakes. Cook until the onions are translucent, about 2-3 minutes.
- Add the five cups of chicken broth and the bay leaf. Bring the soup to a boil. Add the potatoes and turn the heat to low; let the soup simmer for about twenty minutes.
- Stir in the spinach and the heavy cream. Season to taste with salt and pepper, and serve!
