This tasty recipe features delicious pineapple and tender pork in a sweet sauce served over rice. It makes for a great summer-time or tropical-inspired meal! You will want to marinate the pork for at least 1 hour, so plan ahead when making this meal.
Ingredients
- 1 pound pork tenderloin, cut into pieces
- 1/4 teaspoon kosher salt
- 1/2 tsp pepper
- 1 tbsp vegetable oil
- 1 cup chopped pineapple
- 2/3 cup soy sauce
- 2 tsp. minced ginger
- 4 tbsp. brown sugar
- 2 tbsp. chili paste or sriracha
Process
- Prepare the pork: cut the pork tenderloin into smallish pieces. Put it into a resealable container or a ziploc bag.
- Prepare the marinade: mix the soy sauce, minced ginger, brown sugar, and chili paste together.
- Pour only half of the marinade over the pork. Refrigerate for at least 1 hour. Reserve the remaining marinade.
- When the pork is done marinating, place a large skillet on your stovetop and turn the heat to medium-high.
- This is a good time to start preparing your rice. We use boil-in-bag rice for convenience; you can do whatever you like.
- Spray the skillet with nonstick spray or put a tablespoon of oil in the skilled. Add the marinated pork to the skillet. Stir-fry for about two minutes.
- Add the pineapple to the skillet. Cook for another minute or two.
- Add the remaining marinade to the pan. Stir well. Simmer for about 3-5 minutes until the sauce has thickened a little bit.
- Remove the pan from the heat. Serve the pork mix over the rice.
