We love Cajun flavors and pasta, and we’re always looking for new ways to blend the two together. This Cajun Chicken Orzo recipe is a great blend of textures and flavors that’s sure to tickle your palate as much as it fills your belly.
Ingredients
- 1 large chicken breast
- 2 tbsp. Cajun seasoning plus 1 tbsp. Cajun seasoning, separated
- 1 tsp. garlic salt
- 1 tbsp. olive oil
- 1/2 tbsp butter
- 1 onion, diced small
- 2 minced garlic cloves
- 1/4 cup sun-dried tomatoes, chopped fine
- 1 tbsp. tomato paste
- 1 cup Orzo
- 1 cup chicken broth
- 1 cup spinach
- 1/4 cup heavy cream
- 3 tbsp. parmesan cheese
Process
- Cut the chicken breast into small pieces. Place into a large bowl and mix with 2 tbsp. of the Cajun seasoning and the garlic salt.
- Heat a large skillet over medium heat. Add the butter and oil.
- Once the butter is melted, add the chicken to the skillet. Cook it until it is browned and there is little to no pink left.
- Add the onion, garlic, tomatoes, and tomato paste to the pan and stir. Turn the heat to low and stir frequently for about five minutes.
- Add the Orzo to the pan. Cook it for about a minute, stirring the pan constantly so the Orzo doesn’t burn onto the skillet.
- Add the chicken broth and remaining 1 tbsp of Cajun seasoning to the pan. Bring to a low simmer, then cover the pan.
- Cook the Orzo for about 20 minutes. Check the pan every two to three minutes. Orzo can absorb liquid quickly, so if the pan is getting dry but the Orzo isn’t fully cooked, you may have to add a bit of chicken broth.
- Once the Orzo is tender, add the spinach to the pan.
- Once the spinach is wilted, add the heavy cream and parmesan.
- Serve and enjoy!
