Mexican Pizza


I don’t know that you’d actually find this dish in Mexico, but it’s a great Tex-Mex dinner night idea. This dish is popular with both our resident fussy eater and the more refined palates of the household. Plus, it’s economical and relatively easy to prep!

Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning OR 1/4 cup Mexican Spice Mix
  • 1/4 cup water
  • 8 6-inch flour tortillas
  • Kosher salt
  • 16 ounces refried beans
  • 16 ounces taco sauce
  • 1 1/2 cups shredded cheddar
  • 1 1/2 cups shredded pepper jack cheese
  • 1 large tomato, diced
  • Sliced olives
  • 1/2 cup vegetable oil
  • Green onions, sour cream, and Tajin seasoning

Process

  1. Preheat the oven to 400 degrees.
  2. In a large skillet, heat the oil over medium heat. While the oil heats, get out a plate and some paper towels.
  3. Fry each tortilla one-at-a-time in the skillet. It only takes about 30 seconds per side to fry them. They will puff up and should turn golden brown and crispy. Lay each fried tortilla on a paper towel, sprinkle with a little bit of kosher salt, and cover with another paper towel. Stack them up as you go.
  4. Meanwhile: cook the ground beef in another skillet until browned. Drain the fat, then add the taco seasoning and water.
  5. Simmer the meat until the water is mostly evaporated, then add 1/2 cup of taco sauce to the meat. Keep warm.
  6. Warm up the refried beans in a small saucepan.
  7. Assemble the pizzas on a sheet pan:
    • Place a layer of beans on a tortilla
    • Add a layer of taco meat
    • Top with a second tortilla
    • Top the second tortilla with taco sauce, cheddar and jack cheese, and some olives and tomatoes.
  8. Bake for 10 minutes, or until the cheese is melted and bubbly.
  9. Serve! Sour cream, green onions, and a sprinkle of Tajin on top bring this dish to completion. Enjoy!
