A piping hot bowl of Zuppa Toscana.

Ingredients

  • 1 pound of spicy Italian sausage
  • 4 tablespoons butter
  • 1/2 white onion, diced
  • 1 tablespoon minced garlic
  • 6 cups of chicken broth
  • 2 cups of water
  • 5 yellow potatoes, cut into 1-inch cubes
  • 3 teaspoons salt
  • 1 teaspoon black pepper (freshly cracked is best)
  • 2 cups heavy cream (don’t substitute milk, your soup will be watery)
  • 4 cups chopped kale
  • 1/4 cup chopped bacon

Process

  1. In a stockpot, cook the sausage over medium heat until browned. Remove it and set it aside. If your bacon is not cooked, chop your bacon and cook it with the sausage.

  2. Add the butter and onions to the stockpot and saute until translucent. Add the garlic and saute another minute.
  3. Add the chicken broth, water, potatoes, salt and pepper. Bring the mix to a boil and boil it for about five minutes, or until the potatoes are tender.
  4. Turn the heat to medium-low. Stir in the kale and the heavy cream, and then add the sausage and chopped bacon.

  5. Taste and season to your liking.
  6. Serve and enjoy!
