We here at Flocks & Glocks loooooove spicy food. Food without flavor is food without joy! This spicy Cajun chicken and rice recipe is filling and chock-full of flavor.
Ingredients
- 3 tablespoons Cajun seasoning, in 2 tbsp. and 1 tbsp. heaps
- 2 chicken breasts, halved
- 4 tsp. olive oil, broken down into 2 2-tsp measurements.
- 4 tbsp. butter, broken into two 2-tbsp. chunks
- 4 cloves garlic
- Fresh parsley
- 1 medium red onion, chopped fine
- 1 cup rice — you can use brown, white, Jasmine, Basmati, whatever your preference is
- 1 cup milk (I use 2%)
- 2/3 cup cream cheese
- 1/4 cup parmesan cheese
Process
- Season the chicken breasts with 2 tablespoons of Cajun seasoning and olive oil. Use your hands to really rub the spice into the chicken. Set the chicken aside. You may marinate it for as little as 30 minutes or as long as overnight.
- Wash your hands thoroughly afterwards.
- Melt 2 tablespoons of butter in a cast-iron skillet or a large cooking pan. Cook the breasts for 2-3 minutes per side, or to an internal temperature of 165 degrees.
- Set the chicken aside. Prepare the rice according to package directions — you may find that cooking it in chicken broth vs. water adds a nice, rich flavor.
- In a skillet over medium heat, add the other 2 tsp. olive oil, then saute the red onion and garlic. Add the cooked rice and 1 tbsp. Cajun seasoning to the pan, and stir thoroughly. Remove the rice to a serving bowl and return the pan to the heat.
- Add the remaining 2 tbsp. butter to the pan. Once it is melted, add the milk, cream cheese, parmesan cheese, and a dash or two of Cajun seasoning to taste. Stir and cook until the sauce is thick.
- Plate the meal. Serve a scoop of rice, lay a chicken breast on top of it, and drizzle with the sauce.
- Sprinkle with some parsley and enjoy!
