Savory Spaghetti Sauce


Spaghetti is a simple meal that lends itself well to elevation. This fancy spaghetti sauce uses a variety of savory vegetables and spicy sausage to make a delicious sauce that’s a perfect way to juice up spaghetti night.

Ingredients

  • 1 teaspoon minced garlic (use as much as you want, sometimes we just dump a bunch in there)
  • 1/2 white or yellow onion, diced
  • 1 bell pepper, any colour you like, diced
  • 1 cup of diced baby bella mushrooms
  • 1 carrot, diced
  • 2 tablespoons olive oil
  • 1 pound of spicy Italian sausage (you can use sweet sausage or ground beef if you like)
  • 28 ounces crushed tomatoes
  • Fresh basil to taste
  • Salt
  • Red pepper flakes

Process

  1. In a large saucepan, cook the sausage until lightly browned. Drain, and set aside.
  2. Add the olive oil to the pan and cook over medium heat until it is shimmery.
  3. Add the garlic and onions and let them cook, stirring occasionally, for about three minutes.
  4. Add the bell peppers, mushrooms, and carrots. Cook for a further 3 minutes or so.
  5. Add the cooked sausage to the mix.
  6. Add the 28-ounce can of tomatoes to the saucepan, then stir.
  7. Season to taste with salt, red pepper flakes, and fresh basil. Let the mix sit over low heat and simmer for a while to really blend the flavors together.
  8. Serve over spaghetti noodles and enjoy!
