I am a man who likes breakfast. Unfortunately, nobody else in my house likes breakfast. My wife and kids usually prefer to skip ahead directly to lunch, which is rather unfortunate as I’ve found most breakfast recipes make mountains of pancakes or waffles. Here’s a recipe for Pancakes for One, a shout out to all the other lonely breakfast-eaters in the land. We can make heart-shaped pancakes and consume our syrupy comestibles through a wall of tears, together but apart.
Ingredients
- 1 cup flour
- 1 teaspoon baking powder
- 1/2 tablespoon sugar
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup milk (use 2% or whole milk, skim milk is for suckers)
- 1 tablespoon melted butter
- The aching loneliness of a man dining alone
Process
- Mix the dry ingredients together in a bowl with a whisk — or, if you’re a real bachelor, a fork.
- In a separate bowl, beat the eggs for at least one minute.
- Add the milk and melted butter to the eggs.
- Pour the wet ingredients into the dry ingredients and mix together. Do not overmix. You can use a wooden spoon and count exactly 12 stirs if you want to be specific.
- Heat a griddle or a skillet over medium heat. When the surface is hot, rub a little butter over it, then ladle on the pancakes, using about 1/4 cup of batter per pancake. Note: you may sprinkle strawberries, blueberries, or chocolate chips onto the pancakes before you flip them. The added fruit or sweetness elevates the recipe and helps soothe the roaring void of loneliness.
- When the pancakes begin to bubble, they are ready to flip. Carefully flip them over and cook for about one more minute before removing them to a plate.
- Serve! Pancakes are best friends or family, but they’re also good with real maple syrup, honey, or a fruit compote.
