Greek Salad Dressing


Greek salad is a wonderful meal if you crave something salty but want to be mindful of your health. This dressing is easy to assemble and delicious.

Ingredients

  • 3/4 cup olive oil (note: get good olive oil for this. Low-end olive oils are often impostors, or lack the je ne sais quois that real olive oil has.)
  • 1/4 cup lemon juice
  • 2 tablespoons red wine vinegar
  • 1 tablespoon minced garlic
  • 1/4 cup parsley
  • 2 tsp. oregano
  • Salt to taste

Process

  1. Vigorously mix all the ingredients together in a small bowl with a whisk.
  2. Serve over a nice Greek salad.
  3. Store the remainder in a tight-lidded jar.
