Greek salad is a wonderful meal if you crave something salty but want to be mindful of your health. This dressing is easy to assemble and delicious.
Ingredients
- 3/4 cup olive oil (note: get good olive oil for this. Low-end olive oils are often impostors, or lack the je ne sais quois that real olive oil has.)
- 1/4 cup lemon juice
- 2 tablespoons red wine vinegar
- 1 tablespoon minced garlic
- 1/4 cup parsley
- 2 tsp. oregano
- Salt to taste
Process
- Vigorously mix all the ingredients together in a small bowl with a whisk.
- Serve over a nice Greek salad.
- Store the remainder in a tight-lidded jar.
