I love citrus, and this citrus-glazed pork recipe is an absolute winner. You can serve it with a side of rice or fried rice, a nice summer salad, asparagus, or green beans.
Ingredients
- 1 cup fresh-squeezed orange juice
- 1/3 cup orange marmalade
- 3 tbsp. unsalted butter
- 4 tbsp. vegetable oil
- 4 center-cut bone-in pork chops
- 1 tsp. salt
- 1/2 tsp. black pepper
Process
- Season the pork chops with salt and pepper and set aside.
- In a small bowl, using a whisk, mix the orange juice and marmalade.
- Heat the butter and vegetable oil in a large skillet over medium heat.
- Add the pork chops to the skillet and cook, turning once, until they are cooked through, about 3-4 minutes per side. Transfer them to a cooling rack and loosely cover with foil.
- Pour off all but 3 tablespoons of the pan drippings. Then, add the orange juice / marmalade mix to the pan.
- Raise the heat to medium-high and stir with a whisk, scraping up the tasty burnt bits on the bottom of the pan, until the sauce is reduced and syrupy, about 6-8 minutes.
- Return the pork chops to the pan and reduce the heat to medium. Turn the pork chops over a few times, coating them in the sauce, then remove them from the heat and plate them. Serve immediately with a side of rice, salad, or vegetables!
