Garlic Butter Pork Chops with Zucchini


This recipe is a classic preparation of pork chops. It’s served with zucchini for a nice addition from the garden.

Ingredients

  • 4 pork chops
  • Salt and pepper
  • 1 tsp. paprika
  • 2 tbsp. butter
  • 1 1/2 tbsp. vegetable oil, divided
  • 2 zucchinis, sliced into half-moons

  • 4 tbsp. butter
  • 1/2 tsp. garlic powder
  • 1/2 tbsp. basil
  • 2 tsp. parsley
  • 1 tsp. oregano

Process

  1. At least 30 minutes before cooking, season the pork chops with salt, pepper, and paprika.
  2. Heat butter and 1 tbsp. vegetable oil in a large skillet over medium heat.
  3. Add the pork chops to the oil and cook for 5 minutes per side or to an internal temperature of at least 150 degrees.
  4. Meanwhile, prepare the garlic butter. Combine the butter, garlic powder, basil, parsley, and oregano and mix together until incorporated.
  5. Once the pork is cooked, rest it on a rack.
  6. Add the remaining 1/2 tbsp vegetable oil to the pan over medium heat. Let the oil heat until it is shimmery.
  7. Add the zucchini slices to the hot oil. Season with salt and pepper and cook for about 3 minutes. Remove from the skillet.
  8. Serve the pork chops with a dollop of garlic butter and a nice arrangement of zucchinis on the side.
