Chicken satay is always satisfying, especially with this tasty Thai-style peanut sauce.
Ingredients
- 1 1/2 pounds of chicken, cut into bite-size chunks
- 3-4 Thai peppers, or other spicy red peppers
- 1 chopped shallot
- 2 stalks of lemongrass, or lemongrass paste; you may also use a teaspoon of lemon zest and a teaspoon of minced ginger
- 3 cloves garlic, minced
- 1 teaspoon ginger, minced
- 2 tablespoons fish sauce or Worcestershire sauce
- 1/4 cup brown sugar
- 3 tablespoons soy sauce
- 2 tablespoons sriracha
- 1 teaspoon turmeric
- 1 teaspoon cumin
- 2 tablespoons chopped cilantro
- Red pepper flakes or spicy chili flakes
- Bamboo or other wood skewers (available at most grocery stores)
- Thai Peanut Sauce
- (Peanut butter, soy sauce, rice wine vinegar, sriracha, sesame oil, honey, lime juice, cayenne pepper, minced garlic, minced ginger, water)
Process
- Mix all of the ingredients except the chicken in a large mixing bowl with a whisk.
- Add the chicken to the bowl. Cover and refrigerate for one hour.
- Place the wood skewers in a baking dish and cover them with water. This prevents them from charring or igniting on the grill.
- Make the Thai Peanut Sauce and set aside.
- After the chicken has marinated for an hour, place several pieces of chicken on each skewer.
- Heat a grill to medium heat. Place the chicken on the grill and cook 4-5 minutes per side.
- Serve with the peanut sauce, and enjoy! You may serve these skewers along with rice, noodles, or vegetables.
